Flavor-Packed Macho Salad

This is the one salad we get a big craving for—perfect for a meal or served as a side, it is jam packed with plenty of flavor and texture for all to enjoy!

Serves 1 large or 2 side servings
Prep Time: 30-minutes
Cook Time: If using prepackaged or leftovers, no cooking. If making cornbread (15-minutes) and roasting chicken (1-hour), add 1-hour 30-minutes to cook and let rest.
Total Time: 30-90-minutes

Ingredients for the Dressing

¼ cup Dijon mustard
½ cup fresh lemon juice
¼ cup cider vinegar
1-1/2 tablespoon brown sugar
1 tablespoon salt
2 tablespoons black pepper
1 tablespoon chopped garlic
1 teaspoon oregano
2 teaspoons basil
2-1/4 cup olive oil

Ingredients for the Salad

1 cup cornbread croutons
2 cups romaine, chopped
½ cup arugula
1 cup rotisserie chicken, chopped
¾ cup cherry tomatoes, chopped
½ cup scallions, chopped
2 tablespoons fresh corn kernels
6 dates, pitted and roughly chopped
1/2 avocado, chopped
½ cup dressing
1 tablespoon roasted almonds, chopped
1 tablespoon goat cheese, crumbled

Instructions – it’s really this simple!

  1. For the dressing, combine all of the ingredients except olive oil.
  2. When ready to serve whisk in olive oil. Keep refrigerated.
  3. For the salad, toss with dressing and plate.
  4. Garnish with goat cheese and almonds and enjoy!
