Cook Time: If using prepackaged or leftovers, no cooking. If making cornbread (15-minutes) and roasting chicken (1-hour), add 1-hour 30-minutes to cook and let rest.

Ingredients for the Dressing
¼ cup Dijon mustard
½ cup fresh lemon juice
¼ cup cider vinegar
1-1/2 tablespoon brown sugar
1 tablespoon salt
2 tablespoons black pepper
1 tablespoon chopped garlic
1 teaspoon oregano
2 teaspoons basil
2-1/4 cup olive oil
Ingredients for the Salad
1 cup cornbread croutons
2 cups romaine, chopped
½ cup arugula
1 cup rotisserie chicken, chopped
¾ cup cherry tomatoes, chopped
½ cup scallions, chopped
2 tablespoons fresh corn kernels
6 dates, pitted and roughly chopped
1/2 avocado, chopped
½ cup dressing
1 tablespoon roasted almonds, chopped
1 tablespoon goat cheese, crumbled
Instructions – it’s really this simple!
- For the dressing, combine all of the ingredients except olive oil.
- When ready to serve whisk in olive oil. Keep refrigerated.
- For the salad, toss with dressing and plate.
- Garnish with goat cheese and almonds and enjoy!
