Ready or not, its’s summertime. Vacation planning is in full swing and you’re ready to relax. But where? Might we suggest your own backyard? While you might think “Nah, I’m ready for a break from my space, let’s hit the town!”, take a second to picture this: it’s 7 ‘o’ clock on a Thursday night, you’re gearing up for a long weekend of wrestling with the kids to get them out of bed earlier than 2pm whilst planning for your sister-in-law’s birthday party (or was it your cousin?). You’re hungry but not willing to venture out into the great unknown of downtown restaurants and risk running into your coworkers. You know you went shopping earlier in the week and grabbed some chicken with the intention of turning it into chicken nuggets to bribe the kids out of bed with. But what if you grilled those breasts? WHAT if, you grilled them and invited people over..? What if you have a good time, right in your own backyard?

Our favorite aspect of Coyote is its ability to bring entertainment into the picture. While many companies offer grills and grilling accessories, not many offer you an experience like Coyote does. Hosting events goes from a cringe worthy task to a standing weekly date with the neighbors when you’re grilling on top-of-the-line burners whilst mixing margaritas not even 10 feet away thanks to their refreshment center (we’ll take two, please!).
Now, food. You didn’t think we’d leave you without a recipe to pair with your slammin’ new outdoor kitchen, did you? We dug through our personal archives and came up with the perfect fiesta-inspiring grill recipe. Piggybacking off of last week’s blog post about tequila tasting, we decided to stick with the tropical theme and bring you our favorite Tequila Lime Chicken recipe. So grab your best ‘Kiss The Chef’ apron and a bag of margarita mix and let’s get grillin’!
Tequila Lime Chicken
Serves 6
1/2 cup gold tequila
1 cup freshly squeezed lime juice (5 to 6 limes)
1/2 cup freshly squeezed orange juice (2 oranges)
1 tablespoon chili powder
1 tablespoon minced fresh jalapeno pepper (1 pepper seeded)
1 tablespoon minced fresh garlic (3 cloves)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 whole (6 split) boneless chicken breasts, skin on
Combine the tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper in a large bowl. Add the chicken breasts. Refrigerate overnight.
Heat a grill with coals and brush the rack with oil to prevent the chicken from sticking. Remove the chicken breasts from the marinade, sprinkle well with salt and pepper, and grill them skin-side down for about 5 minutes, until nicely browned. Turn the chicken and cook for another 10 minutes, until just cooked through. Remove from the grill to a plate. Cover tightly and allow to rest for 5 minutes. Serve hot or at room temperature.
