Even though we’re coming into the close of summer and fall is beckoning us with the promise of crisp leaves and thick cable knit scarves, we’re all still craving those fresh and easy summer foods. Recently we enjoyed some delicious smoked harissa pork carnitas on our own patio for a family dinner, thanks to the folks at Coyote Outdoor Living and the easy to assemble Asado Smoker.
The Asado is perfect for grilling or smoking meat, but because of the easy temperature control with multiple vents, you can also cook pizzas, bread, pie, and cookies! Vinny quickly assembled the cart, which functions as a base with wheels for easy movement, and then simply placed the smoker directly into it, adding the top vent and then the firebox, charcoal plate and cooking grill. After that, it was as easy as assembling the side tables and adding handles. It’s important to cure your smoker before using it, so that it’s prepped and ready for use.
I used some harissa spice on a thick pork shoulder and prepped some Yukon gold potatoes and veggies to go into the smoker later with the pork. It wasn’t long before we enjoyed a meal of smoked harissa pork carnitas with potatoes and veggies, all prepared in the Asado Smoker. I served the carnitas with some fresh guacamole and a hearty bean chili, creating a summer feast with our family to remember.
